Description: A SOFT PASTE DAIRY, OBTAINED FROM THE COAGULATION OF THE MILK RENNET WITH ADDED MILK AND COAGULANT MINERALS

Ingredients: Whey, Milk, salt, coagulating mineral salts
Without preservatives
Treatment of crust: None 

Destination:  Cheese for the table and kitchen

Seasoning: It is ready for consumption after its preparation

Shelf life: To be eaten within 5 days of production.
If kept under vacuum or in a protected atmosphere it can last up to 10 days.

PHYSICAL AND SENSORY CHARACTERISTICS at 1 day:

  • Shape: cone shaped trunk, weight varies between 300 and 400 gr
  • Crust: non existing with a basket surface
  • Paste: soft, of a milky colour, clumpy, incoherent
  • Odour and flavor: of a low intensity, with a hint of cooked milk and cream .
  • Taste: sweet and slightly acidy and lightly salted
  • Structure of the clumpy paste: humid, deformable, slightly adhesive and with a good solubility.

MICROBIOLOGICAL LIMITS: Listeria m. und Salmonella absent in 25g

SELLING FORMAT: It is sold in a piece, wrapped by hand in paper specific for this use.

CONSERVATION: During use it is to be kept in fridge at a temperature of +2°C to +4°C

ALLERGENS: Cow’s milk, (at the dairy are used egg proteins, nuts, walnuts and pistachios)

GLUTENS: Plant does not use products containing gluten.
