For the Montasio the shape is substance. It is a cheese of high nutritional values, with an equilibrated composition: 36% water, 32-34% lipids, 24-26% proteins. Depending on the ageing, it acquires different characteristics.
The white compact paste, with its homogeneous appearance and a smooth elastic crust, becomes granular and crumbly, with a dry darker crust as it ages.
It is a cheese always in good shape, at any age: it is healty for everyone, adults and children, and thanks to its high digesibility, it is particularly indicated for children and elders.
It is part of the limited number of Italian cheeses, which have obtained from the European Union the exclusive qualification of Denomination of Protected Origin (DOP). The consortium for the protection of the Montasio cheese places its stamp on the rind of the cheese as a guarantee of the authenticity and the nutritional and organoleptic characteristics of the product.
